Monday Got Away
I don't know where it went, but it disappeared...Monday is the day I was supposed to do my first Diet Challenge 2009 post. Not only did I not get my post done, I was absolutely horrible in the eating department..very, very bad. I'm confessing and then I'm done with it...Monday's are my day to take mom out and run all of her errands...she had a list and she wanted to go to Red Lobster for lunch. I was less than good there...half of a cheddar garlic biscuit (gosh those are good) fried catfish and fries...oh I did have a tossed salad (bad news is it was swimming in Ranch dressing). As if that wasn't bad enough...we went to dinner with the other half of the herd's mom and dad and I had crusty bread with pesto olive oil , the main course fine and I should have stopped there but No...chocolate creme brulee...they brought 4 spoons to the table and no one ate a bite...I ate it! It was good...no it was yummy! That's it...I'm done...I've confessed and I'm on the right road today. Judy told us about her yummy enchiladas from Trader Joe's. Well you know how I've whined that we don't have a Trader Joe's her, so Judy was sweet enough to tell me what was in them and I got the ingredients today...black beans, corn, pinto beans, a tiny bit of shredded cheese rolled up in a white corn tortilla...cover with enchilada sauce and pop in the microwave. YUMMERS! High in fiber, low in fat...filled me up really fast. Thanks Judy...my lunch was GREAT!

Ok Carol....I don't know how to tell you this...but have you looked in the mirror lately??? No? I have a secret.....Come closer...shhhh....are you listening???....closer still....
YOU DON'T NEED TO BE ON A DIET!!!! What in the heck are you doing dieting? If the rest of us were as thin as you, we wouldn't need to diet either. So, enjoy that creme brulee for the rest of us!!!!
Just now catching up with reading - how did I miss this? I guess I must join along too. I'll have to ask Sharon if I can keep reporting on Wednesday, since that's my WW weigh in day.
Hang in there - you can do this. It takes a little while to get into a new routine. This last week I was pretty bad also - especially on Friday when I ate my daily alotment of points at one very delicious Chinese grill meal!
Oh yummy! Never heard of enchilada sauce, but luckily I just pop in the TJ version and eat all day. Yummy!

But my oh my you really put away some food girlfriend. LOLOL When you mentioned those biscuits..........oh lordy. I love those!! And creme brulee is my all time favorite dessert. So stop it!!! Stop it now!!!

Take it slow Carol. One pound at a time. In the end, it all adds up! What did Scarlet O'Hara say? "Tomorrow is another day"? Hmmm, I believe she also is famous for saying "As God is my witness, I will never go hungry again"....lol
Carol - why are you dieting? YOu are already super thin. Are you going with my blog comment about sticking out your tongue and standing sideways so we will see you?
O.k. I'm going to TJ's today and looking for those enchiladas...I better go over to Judy's and see what the fuss is about :)
I will admit to reading the others' comments, because I've been wondering the same thing - why are you on a DIET?? You are a gorgeous, trim woman from what I can see. If it makes you happy, lovely lady, you go for it! I know I always feel better when I eat more healthy. We don't have a Trader Joe's nearby either, but I think a trip is called for. I LOVE the yummy, healthy (and not so healthy) things they sell there.
